How Additions Affect the Ratio

The base ratio is just chocolate and cream. Every additional ingredient shifts aw and texture:

Glucose syrup (10–20 g per 500 g ganache)
Lowers aw, extends shelf life, improves gloss and prevents crystallisation. Counts as part of the liquid weight — adjust cream slightly.

Invert sugar / trimoline (10–30 g)
Stronger aw reduction than glucose. Also adds softness and delays drying. Common in long shelf-life pralines.

Butter (15–30 g, added below 34°C)
Increases fat content, improves mouthfeel and gloss. Does not affect aw significantly but changes texture — makes ganache firmer when cold, silkier when warm.

Alcohol (spirits, liqueurs)
Lowers aw via antimicrobial effect. Use 10–30 g per 500 g. Too much prevents setting. Account for sugar content in liqueurs.

Every ganache, at every ratio, must satisfy one constraint: all components sum to 100% of total weight. The ratio you choose distributes weight across these five primary variables.

Frequently Asked Questions

What ratio do I use for milk chocolate ganache?

Milk chocolate has more milk solids and usually less cocoa butter than dark, so it melts softer. Use 2.5:1 to 3:1 for a firmness equivalent to 2:1 dark ganache. White chocolate is even softer — start at 3:1.

Can I substitute other liquids for cream?

Yes. Fruit purées, alcohol, tea, coffee, or infused milks all work as partial or full cream replacements, but each has different fat and water content. Why does my ratio vary between sources?

Most recipes give approximate ratios without specifying the cacao percentage of the chocolate, the fat % of the cream, or whether additional fats/sugars are included. A 2:1 ratio with 70% dark and 35% cream behaves very differently from the same ratio with 55% chocolate and 20% cream.

How does the ratio affect water activity (aw)?

Higher chocolate ratios reduce the proportion of free water in the ganache, lowering aw. Lower aw means slower microbial growth and longer shelf life. Every 0.5 increase in the chocolate ratio reduces aw by roughly 0.05–0.08 points (varies with cacao % and added sugars).
